Rice Reflections September is National Rice Month, so it’s only fitting to take a moment to reflect on this versatile food that more than three billion people around the world depend on for part of their staple diet. Here in the United States, Americans consume 25 pounds of enriched white and brown rice per person per year. And that’s good news when it comes to nutrition. A recent study published in Food and Nutrition Sciences found that adults who eat rice had higher amounts of potassium, magnesium, iron, folate and fiber in their diets and also were shown to consume more servings of fruit, vegetables, meat and beans than non-rice eaters.
