Little Legumes, Big Impact Lentils, beans, peas and chickpeas—these little legumes, also known as pulses, are more important to a healthy diet than you might think! Pulses are high in vegetarian protein and dietary fiber; plus, they are one of the most sustainable crops a farmer can grow. For that reason and more, the United Nations General Assembly declared 2016 the International Year of Pulses, a fact that you can use to get staff members engaged in finding new ways to add these nutritious ingredients to the menu. Try adding extra beans to the turkey chili, for example, or substituting lentils for ground meat in a sloppy Joe.
