» meet capri jenkins CHILD NUTRITION LUNCH MANAGER » Provo City (Utah) School District Q: How long have you been a member of the national Association, and have you attended ANC? A: I’ve been a member for 15 years, but 2015 in Salt Lake City was my very first national ANC. I have to say I really enjoyed being able to walk into any class that was of interest to me. I also loved that the Exhibit Hall was open multiple days. This gave us a chance to talk to the vendors and get to know their products better. Q: What’s your favorite aspect of the school nutrition profession? A: I love knowing that I am making a difference in so many children’s lives. Q: What’s your favorite vacation spot, and why? A: My family likes to go fishing at Strawberry Reservoir [in Utah]. We sleep in our boat; it’s a big one with a bed, little kitchen, bathroom and plenty of room to sleep. We also like going to the sand dunes down south, where we ride four-wheelers. We all have race bikes and like to get a little crazy! Q: What do you do when you have an hour of free time? A: I don’t really have any free time. Besides working in the child nutrition program, I am also a seamstress. Right now, I sew with leather and make thousands of luggage tags, several different types of wallets, military bags made out of canvas and many more items. Any free time I have I spend with my kids, watching their softball games or just catching a late-night movie. Q: Tell us about your children. A: I have three children and one stepson. My oldest daughter (age 23) was just hired by the Springville Police Department; she has been married for two years and has just found out that she is pregnant. I’m so happy to finally become a grandma! My son (21) has just passed his CDL test and is going to become a truck driver and work for my husband, who has his own trucking business. My stepson (24) also drives trucks for his father. My youngest daughter (15) is a sophomore and plays softball for Provo High. She is one of their top players! Q: What’s your motto or favorite quote? A: “If your actions inspire others to dream more, learn more, do more and become more, you are a leader.” Q: What’s your favorite meal? A: I pretty much love all Mexican food, from chips and salsa to beef and bean burritos to tamales, tacos—you name it and I like it! However, school lunch is the healthiest meal I eat. We make a lot of our meals from scratch and serve fresh fruits and vegetables every day. Q: People would be surprised to know that…. A: I work at the same school I attended growing up. Q: Are you a morning or a night person? A: I would have to say I’m more of a morning person; I love the cool air and listening to the birds. I like the quiet and calm before the rush of all the traffic.
