A) Educating the kids, especially the less-fortunate that attend our school, on how important it is to eat school breakfast so they can focus in class. Another favorite aspect is teaching the children, and some adults, the importance of eating fruits and vegetables every day—especially the dark green and red orange vegetables. Q) How many national conferences have you attended? A) I have only attended one; it was last year in San Antonio. I got to meet broadcast journalist John Quiñones and take a picture with him! I also attended some of the classes that they offered, which really helped enhance my knowledge in foodservice. Q) What’s your secret phobia? A) I can’t drive at night by myself ever since I got into a car accident. Q) What’s your favorite meal? A) Any type of cooked seafood, especially crab legs and types of Filipino foods, such as Seafood Lumpia and Shanghai Lumpia, which are types of spring roll. Q) People would be surprised to know that... A) I am a workaholic. I have a full-time job with the school, and, with the help of my husband and oldest sister, I also have a separate business, which is a foster care home for the elderly. I also help my son on his farm on the weekends. Another surprising fact is that I hold a commercial driver’s license (CDL) to drive a big truck. Q) What accomplishment are you most proud of and why? A) AI am most proud of being a foodservice manager, an SNA member and being able to attend ANC 2016. Additionally, before I was hired at the school cafeteria, I was self-employed and had multiple businesses that were successful enough to allow me to send my three children to private school until they graduated. Q) What’s your favorite thing about where you live? A) There are many things that I love about where I live in Hawaii. We have the best weather here, and we are surrounded by beautiful beaches and an active volcano nearby. That’s not to mention the flowers and fresh fruits and vegetables that you can buy at the open market. Q) What is one of your best memories from childhood? A) It’s hard to choose just one! I have a couple: When I was crowned as “Maria Elena” in our parish, being a member of the Girl Scouts and having my big sister as my teacher. Q) What goal do you hope to attain in the next 5 to 10 years? What steps do you plan to take to get there? A) I’ve been working in this department for 22 years, so I plan to continue working 8 more years so I can apply for my full retirement from the state. I also plan to continue to expand my business, so that I can help more families and the elderly that need more attention and care. This also helps relieve stress from their loved ones so that they can spend time together without the stress of being a caregiver.
