<br /> Welcome, friends and readers!<br /> <br /> Have you started your holiday shopping yet? Or, are you more like me? I’ve started thinking about starting my lists, but that’s as far as it’s gotten.<br /> <br /> The cookbooks I receive this time of the year from Taste of Home, Southern Living and a myriad of others has started my annual, “I think I should make that” list for the holidays as I peruse the pages and devour the photographs. Why do all those photos and dishes have to look so tasty? Of course, we all know they took the calories out. (Yeah right! One day I’ll weigh what my driver’s license says I do, too).<br /> <br /> It’s also time to think of traditions that we’ve embraced over the years, from family members sharing what they are thankful for at Thanksgiving to watching family videos from years past (and sharing laughs and memories while making more memories!).<br /> <br /> Here’s a quick and easy recipe from my mom for you to try. It’s a family favorite:<br /> <br /> Mom’s Cheesecake Recipe<br /> <br /> 1 3-oz. pkg. lemon gelatin<br /> 1 cup boiling water<br /> 1 8-oz. pkg. cream cheese<br /> 1/2 cup sugar<br /> 1 teaspoon vanilla<br /> 1 12-oz. can MILNOT, whipped<br /> 3 cups graham cracker crumbs<br /> 1/2 cup butter or margarine, melted<br /> <br /> Dissolve gelatin in boiling water. Chill until slightly thickened. Cream together cheese, sugar and vanilla; add gelatin and blend well. Fold in stiffly whipped MILNOT. Mix graham cracker crumbs and melted butter together; pack 2/3 of mixture on bottom and sides of 9x13x2-inch pan. Add filling and sprinkle with remaining crumbs. Chill several hours (or overnight). Cut in squares and serve plain or garnished with fruit. (We use cherry pie filling on top.) Serves 12-16.<br /> <br /> Variations:<br /> <br /> Miracle Cheese Cake: To Mom’s Cheese Cake add 3 tablespoons<br /> lemon juice and 1/2 cup sugar.<br /> Miracle Lime Cheese Cake: Substitute lime flavored gelatin and lime juice in above recipe.<br /> Miracle Orange Cheese Cake: Use orange flavored gelatin and orange juice in Miracle recipe.<br /> Miracle Pink Cheese Cake: Use red gelatin (strawberry, cherry, etc.) and use Miracle Cheese Cake recipe.<br /> Fruity Miracle Cheese Cake: Add one to two cups of drained diced or crushed fruit to Miracle recipe.<br /> <br /> So, now that I’ve started my list and shared a recipe you can start your list too. I have to get started on the rest of them: Thanksgiving menu; Christmas menu; grocery lists; cleaning to-do lists; Christmas shopping lists for family, friends, coworkers; a list for all the grandkids’ sizes; and, to top it all off, a list to keep track of my lists!
